By popular demand from the annual women's Spring dinner:

Crustless spinach quiche ( The Kosher Palette)

2 large eggs, lightly beaten
1/2 cup milk
1/2 cup mayo
1 small onion, chopped
2 (10 0z) bags frozen spinach, thawed and drained
3 Tblsp cake meal ( or matzo meal)
2 cups (8 oz) shredded cheddar cheese
2 cups (8 oz) shredded mozzarella cheese

Preheat oven to 350

Combine eggs, milk , mayo, onion, spinach, cake meal and cheddar cheese in a large bowl.
Pour into a greased 9 inch round or 8 by 8  inch baking dish.  Sprinkle with mozzarella cheese.
Bake 30-45 min. or until puffed in center and knife inserted near center comes out clean.

Yield :9 servings


Shelly's Cheese Quiche

Line a frozen pie crust with 11/2 cups shredded cheese
2) Add 1 med. onion and 1/4 lb mushrooms sauteed with salt and pepper.
3) Mix together:
   4 eggs.11/2 cups milk, 3 Tbsp flour, 1/4 tsp salt, 1/4 tsp dry mustard (optional)
4) Pour mixture into crust
5) Sprinkle paprika
6) Bake at 375 for 40-45 min.

Variation: instead of mushrooms and onion you can put just onion, scallions, fresh tomatoes sliced in rings, or broccoli.
